spicy shrimp quesadillas

I have a confession. For the LONGEST time I was afraid of shrimp. I would eat it all the time, but I never wanted to cook with them because they kind of freaked me out. But, not anymore!! What have I been missing all of these years?

Alright. Another confession. I use the frozen kind – that are already cooked! Baby steps! Actually, it is on my goal list for 2017 to buy whole shrimp and learn to clean and cook them. I’ll be sure to post all about that when it happens.

A few weeks ago, I found out last minute that the appetizer I planned to make for a party someone was already bringing. Darn it! I had to whip something up quick using whatever I had in my refrigerator and pantry. Isn’t it great to be able to throw something together that tastes amazing?! And this little shrimp quesadilla was my creation.

While the shrimp were thawing in a colander with cold water running on them, I made a quick cole slaw. I mixed together half a bag of cole slaw mix, juice from two limes, salt and pepper to taste, diced tomatoes, diced jalapenos, cilantro and a tablespoon of sugar. This is mainly all to taste – so use what you have on hand! Let that soak in all the lime-juice goodness.

Once the shrimp are thawed, remove the tails (if they have them) and mix with a little cayenne pepper to your desired heat level. I threw them in a pan just to saute them and warm them up before making my quesadilla.

Now, time for the BEST part – let’s make that quesadilla. Warm your tortilla in the pan. Add cheese to the entire tortilla. Add the shrimp and cole slaw to half of the tortilla. Once the cheese has melted a little, fold it in half and brown both sides. Top with avocados. Yum!¬†Boom – quesa to the dilla, baby.
