health(ier) pizza recipes to fulfill your cravings

It’s Sunday. Football Sunday. One of my favorite days of the week to try some new recipes I’ve been itching to make.

I have been tasting for pizza, but knew I should try to make it a little healthier. I mean, it is 2017 so we need to work towards those New Years Resolutions, right?? I settled with two different pizzas, because honestly, two is better than one!

First I made a Spinach Pesto Pizza on a pita! All you need is a pita, jarred pesto, a ball of mozzarella sliced, spinach, feta and tomatoes. Start by laying out your pita on a cookie sheet, then layer the rest of your ingredients: pesto, mozzarella, spinach, tomatoes and feta. Then, pop it in the oven at 400 degrees for 5-7 minutes until the cheese is bubbly and the crust is browned. These would be great for a party – make a bunch of different ones for people to try!

The next one I made was a portobello pizza. You will need portobello mushrooms, marinara sauce, cheese, and whatever toppings you want to add – I just used tomatoes and pepperoni.

This one is a little more involved, but you will want to remove the stem and spoon out the insides. Check out the photo below for reference. This way you create a deeper “bowl” to add your toppings. I placed these on a muffin tin. Put that in the oven for about 5 minutes at 375 so it can begin to cook.

Then, inside of your mushroom, add your sauce and top with cheese, and whatever else you want to add. These go in the oven for another 20 or so minutes at 375 until the cheese is melted and golden.
