sunday: BBQ chicken sliders, caprese bites and loaded tots

Happy Monday! I am so thankful that I have today off for a long weekend!

I had the most perfect weekend! We were able to go get some pumpkins (thanks neighbors!) to do a little decorating. It was fun to pick our own pumpkins off the vine. We made quite the haul!!

The last few Sundays have been filled with football, food and friends! I will take ANY reason to cook some food for others. This week I made some of my favorites: BBQ chicken sliders, caprese bites with prosciutto and loaded tots on skewers!

The great thing about these three dishes are how easy they are to make! No one wants to be stuck in the kitchen cooking while company is over. These can be made with little prep the morning of your party!

These BBQ chicken sliders would be a family favorite for kids or adults. I boiled some chicken a few days ago, and shredded it afterwards. Sunday morning, I took that chicken and added a little BBQ sauce to it. I bought some potato rolls at the store and but the bottom halves in a 9×13 baking dish, layered some of the meat and then shredded cheddar cheese. I threw that in the oven at 350 for a few minutes to warm up the meet and melt the cheese. I took them out and added the tops of the buns then brushed melted butter over the top. Pop them back in the oven for about five minutes (or until heated through and the tops are brown). That’s it! So easy! I also served them with ranch dressing. Yum!


Who wouldn’t enjoy making your own loaded tots on a skewer? I had some garnishes on hand so you could build your own.


And, you need something that is fresh and healthier – so my go to is caprese bites! These you can also make the morning of. Slide on a pearl sized mozzarella ball, a little basil, cherry tomato and I finished these off with proscuitto! Get. In. My. Belly!
